The most important such article is Seamount.
In general, "B" class articles which are "Mid" importance or higher should be polished up and nominated as good articles.
The easiest way to find articles which fall within a particular intersection of quality and importance categories is to use the assessments worklist, which is transcluded from Wikipedia:Version 1.0 Editorial Team/WikiProject Seamounts articles by quality. Please the Assessment department for details.
Using the bot-generated assessment logs, it is now possible to generate a watchlist which includes all articles within the project's scope. - Most (but not all) seamounts are also volcanoes, so they fall within the scope of WikiProject Volcanoes. But as the "Scope" above demonstrates, this project is far from being a mere subset of WikiProject Volcanoes.

Many Seamount articles are missing the {{Template:Infobox Seamount}} infobox; one of the main current goals of the project is to generate one for every notable seamount. However, there is also an extremely useful template for generating a "map" of the object from a blank map, via {{Template:Location map}}. Alternatively, you may grab a blank map, place a marker on it, and upload it. The perfered marker is File:Wallpaper group diagram legend rotation3.svg, which gives you (note that it has a white border, too)
