Draft:Concours de la meilleure baguette de Paris

From Wikipedia, the free encyclopedia

The Concours de la meilleure baguette de Paris, officially the Grand prix de la baguette de tradition française de la ville de Paris is a competition held since 1994 by the city of Paris, in collaboration with the support of the National Confederation of French Bakery and Pastry (CNBBPF).[1]

The competition judges the best baguette bakers of Paris. A list of the ten best artisan bakers is drawn up, in order of merit. The first of them receives a medal and a prize of 4,000 euros.[2][3] The baker is given the honor of becoming a supplier to the Élysée for one year.[4]

The competition has been organized by the Paris City Hall since 19945. It takes place on the premises of the Professional Chamber of Baker-Pastry Craftsmen, on the Île Saint-Louis.[5] The jury is made up of professionals, specialized journalists and six Parisians drawn by lot.[6][7] To compete, "the products must measure between 55 and 65 cm, weigh between 250 and 300 grams and have a salt content of a level of 18 grams per kilo of flour". The baguettes are numbered to guarantee anonymity.[8] The selection criteria are doneness, crumb, taste, smell and appearance.[9] These qualities are scored between 0 and 4. Thirty breads are thus selected to take part in the competition, which will determine the best Parisian baguette of the year.[8]

In addition to a medal and a prize of 4,000 euros, the winner becomes a supplier to the Élysée for one year. He also benefits from recognition allowing him to increase the turnover of his bakery, and even from international notoriety.[8][10]

The system for awarding contracts for the Élysée and various administrations (Beauvau, for example) was transformed in 2013 (details to be specified): an award competition subject to public procurement rules was organised. The 2013 winner, Ridha Khadher, won it in 2014: he has since been the only supplier in this market12, as he confirmed on February 3, 2018, on a television news channel. Of Tunisian origin, he is also presented as a model of successful integration.

Since 2020, Paris City Hall has offered 6 Parisians the opportunity to participate in the competition jury.[11]
